Saturday, July 19, 2003 ( 10:39 AM ) MB Some Louisville restaurant-style recipes worth trying (from the Courier-Journal): War su gai (Fortune Cookie Restaurant) 2 1/4 cups flour 1/4 cup cornstarch 1/8 teaspoon baking soda 1/8 teaspoon baking powder 2 teaspoons vegetable oil 1/4 teaspoon salt 1/4 teaspoon sugar 1 1/2 to 2 cups water 8 pieces boneless, skinless chicken breasts Oil for frying Gravy: 1/2 cup vegetable oil 1/2 cup flour 3 to 4 cups chicken broth 1/2 teaspoon salt 2 teaspoons soy sauce 1/2 teaspoon sugar 2 dashes pepper 2 dashes garlic powder Bed of vegetables or lettuce Mix together the flour, cornstarch, baking soda, baking powder, vegetable oil, salt and sugar. Add enough water to make a thick batter. Dip chicken in this mixture until coated. Deep-fry in hot oil until chicken is golden and cooked through. Set aside to drain on paper toweling. While chicken is cooking, prepare gravy. In a skillet over medium heat, cook oil and flour until brown. Add chicken broth, salt, soy sauce, sugar, pepper and garlic powder. Continue to cook, while stirring, until thickened. Place chicken on lettuce or a bed of steamed or stir-fried Chinese vegetables. Ladle gravy over all. Serve immediately. Makes 4 to 6 servings. Butterfly Garden's chicken salad 2 cups diced, poached boneless skinless chicken breast 1/3 cup chopped pecans 1/2 cup seedless red grapes, halved 1/3 cup chopped celery 1 tablespoon minced onion 1 tablespoon fresh minced parsley Salt and pepper to taste Dash poultry seasoning 1 1/3 cups mayonnaise (for very soft texture) Mix together all ingredients. Serves 4. Not-quite-Tumbleweed's salsa 15-ounce can diced tomatoes with green chilies, undrained (Red Gold brand) 15-ounce can tomato sauce (not puréed tomatoes) 1/2 cup diced onion 1/2 cup diced green pepper 2 tablespoons chili sauce 1 tablespoon, or to taste, pickled jalapeno pepper slices (optional) Stir together all ingredients. Serve with tortilla chips. This keeps well in the refrigerator. Yields about 1 quart. Permalink Wednesday, July 16, 2003 ( 8:38 AM ) MB I haven't been able to get on BlogShares since last night. The down side is there are stocks I wanted to buy as soon as the blogs were indexed and there were shares I wanted to sell. The upside is that now I'm spending more time actually reading other blogs. Finding new blogs was the main reason I joined BlogShares to begin with. Ones I like I add to my BlogRollling and/or to JoeAnt. With more time to spare, I'm still searching for shallow self-awareness through silly quizzes. I took one to find out what kind of feeling I represent. You represent... apathy. You don't really show any emotion. You can be considered cruel and cold, but you just don't really care about anything. This is just the way you are... you're quite a challenge to get close to, and others may perceive you as boring. What feeling do you represent? brought to you by Quizilla Cruel and cold? Boring? Not that I care.... One quiz is "What element would you rein over (For Girls)". I think they mean reign. Maybe I should have represented pedantry. Special Weather Statement - Urgent - Winter weather message has been issued for Jefferson county KY It has been a bit cooler around here lately. Only 84 degrees rather than in the 90s. I know they say if you don't like the weather, just wait an hour...but seriously, winter warnings in summer? If we get snow warnings on the 25th, I will believe in Christmas in July. (Yes, I know the warning has February dates in it and must be a glitch in their system.) Permalink |
