Saturday, June 29, 2002 ( 2:17 AM ) MB I have some bananas that are getting fairly ripe, so the recipe for today is Chocolate Chip Banana Bread: 3/4 c. sugar 1/2 c. butter or margarine, softened 2 eggs 2 medium bananas, mashed 1/3 c. milk 1 t. vanilla 2 c. flour 1 t. baking soda 1/2 t. salt 1 c. chocolate chips or mini chips Preheat oven to 350 degrees. Grease and flour bottom only of one 9"x5" or two 8"x4" or three 6"x3.5" loaf pans. In a large mixing bowl, beat sugar and butter. Beat in eggs. Add bananas, milk and vanilla; blending well. In separate bowl, combine flour, chocolate chips, baking soda, and salt. Add dry mixture to banana mixture, stirring just enough to moisten dry ingredients. Pour into pan(s). Bake at 350 degrees for 40 - 50 minutes for smallest pans adding five to ten minutes more for larger pans (or until toothpick inserted in the center of the bread comes out clean). Cool 5 minutes, remove from pan and let cool completely. Permalink ( 2:12 AM ) MB Things have been busy around here. We added a new kitten, Zoe, to our family. Our other cat, Zelda, isn't very pleased with us right now. She spent the first day stalking the kitten, now she just tries to ignore her. Unfortunately for Zelda, Zoe isn't one to be ignored. She's into everything and thinks that Zelda should play more. I've also been updating my site, Mom's Kitchen. I had so many links to newspaper food columns that I divided the media sites into separate pages. Not an easy task when you have a kitten walking across your keyboard every few minutes. I did take a break and let her watch this. "Follow that thing!" seems to be the favorite. Permalink Wednesday, June 26, 2002 ( 11:23 PM ) MB If it's unconstitutional to pledge allegiance to the flag of the United States if you use the phrase "under God", maybe we should change it...how about "under Microsoft"? Or would that upset the Mac and Linux users? Seriously though, that part of the pledge was only added in the 1950s. I grew up saying the pledge including "one nation, under God" and I would feel a sense of loss if it's taken out, but still...I could live without it. My faith is a personal thing. I don't need to announce it to know it's there. I would rather keep the pledge without the reference to God than to toss out the whole thing. For one nation, united in any manner, we sure do disagree about a lot of things. At least we are allowed to voice our disagreement. Permalink |
