Random Thoughts From a Confused Mind | ||||

Saturday, May 25, 2002 ( 11:42 PM ) MB I've been trying to think of a recipe that would be good for Memorial Day. I could post one for something grilled since cooking out is often a big part of the holiday. That seemed a bit too obvious. Instead, I'm offering a link. This site tells about the women who made doughnuts for the soldiers in World War I. U.S. soldiers brought a taste for the fried pastry back home and thus began the popularization of the doughnut. They also include an original recipe just in case you want to fry up 250 doughnuts. If you want a smaller batch, here's one from the Salvation Army that makes 15 - 20. Permalink Wednesday, May 22, 2002 ( 6:42 PM ) MB Obviously I never made it back here yesterday. We went out for dinner at Damon's. They have several large screens showing news and sports, but they also have one with a trivia game. You ask for a console so that you can play and you compete against others in the restaurant and across the country. I found I could play online too...so there went the rest of the evening (and a good bit of this afternoon too.) Here's something to snack on while playing, Spiced Nuts: 1 (12 oz.) can mixed nuts 3 Tbl. hot sauce 1 Tbl. vegetable oil 3/4 tsp. seasoned salt 3/4 tsp. garlic powder Preheat oven to 250 degrees. Place nuts in 15" x 10" jelly-roll pan. Combine remaining ingredients in a small bowl; pour over nuts. Toss to coat evenly. Bake 45 minutes or until nuts are toasted and dry, stirring every 15 minutes. Cool completely. Makes about 2 cups. Permalink Tuesday, May 21, 2002 ( 9:11 AM ) MB I haven't been writing much the last few days because I've been moving my recipe site from Geocities to Moms-Kitchen.com. There is still a lot of work I need to do on it, but I'll try to add a recipe here later today. Permalink Sunday, May 19, 2002 ( 8:47 PM ) MB One of my favorite cookies is a shortbread-like thumbprint cookie filled with chocolate. Chocolate Thumbprint Cookies Cookie: 1 cup butter 2/3 cup sugar 2 egg yolks 1/2 tsp. vanilla extract 2 1/4 cups flour 1/2 tsp. salt Chocolate frosting: 1 cup sugar 1/4 cup cocoa 1/4 cup milk 1/4 cup butter 1/2 tsp. vanilla extract Cookies: Cream butter; gradually add sugar, beating until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Stir in vanilla. Combine flour and salt; add to creamed mixture, mixing well. Chill. Roll dough into 1" balls; place balls about 2" apart on ungreased cookie sheets. Press thumb in each ball of dough, leaving an indentation. Bake at 300 degrees for 20 to 25 minutes; do not brown. Allow to cool on wire racks. Place about 1/2 t. chocolate frosting in each cookie indentation. Frosting: Combine sugar, cocoa, and milk in a heavy saucepan. Bring to a boil, and boil 1 1/2 to 2 minutes, stirring constantly. Remove from heat; stir in butter and vanilla. Beat until mixture is of spreading consistency. Permalink ( 1:48 AM ) MB I just sent an email to my friend Michele. Talking to her on ICQ used to be one of the best things about being online, but she hasn't been on in months. That's the problem with long-distance friendships, you can't just drop by and visit when you haven't seen someone in awhile. (She lives in Scotland, I live in Kentucky.) Anyway, I'm hoping she reinstalls her ICQ. I miss talking to her. She's one of the funniest people I know and it always amazed me how much we thought alike about things despite our different backgrounds and locations. Permalink |
